Ingredients

500g Champion Scone Mix
280mL water
50g Unsalted Butter (Softened)
Flour for dusting

Method

  1. Preheat oven to 200°C or 180°C fan-forced Line tray with paper.
  2. Place water into mixing bowl, followed by the Champion Scone Mix and softened unsalted butter. Using a dough hook attachment on an electric mixer, mixer on low speed for 5 minutes.
  3. Tip the dough onto a floured bench and knead it into a round disc shape.
  4. Dust the damper with a bit of extra flour and bake for 30 minutes. When tapping on the bottom of the damper, it should sound hollow when cooked.
  5. Cool on wire rack before serving.
